Freezer Meals

When I was pregnant, my mom came a lot to help towards the end. It was the summer, I was out of work and CJ was teaching summer school. So pre-babies there wasn’t a lot to do (or that I was able to do for that matter!) So we made a bunch of freezer meals for the long days/nights that were about to be upon us after family left and we knew the last thing we would feel like doing is cook. Here are some great ideas and ones that we used that were easy and actually quite delicious, even after being frozen! One of them is my own personal secret recipe so isn’t a link but is definitely one you should try, it’s healthy and great all year long!
Any of these can easily be stored in plastic gallon freezer bags (crockpot meals get stored uncooked) labeled with the date made and enjoyed within 6 months of freezing.

Chocolate Banana muffins
Pumpkin walnut muffins (both great for breakfast or anytime snacking!)
Crockpot chicken teriyaki
Chicken and Broccoli Stir-fry 
Turkey and Chive Meatballs

We also had about 4-5 pounds of frozen hamburger meat, actually separated into hamburgers for easy removal and portioned meals.

Soup is also very easy to make ahead and freeze, then just reheat!

Tomato Soup
Chicken and Corn Chowder
Squash soup
Pasta and Bean soup
Carrot-Rice Soup

My famous chili 🙂

1 lb ground turkey
1 can diced tomatoes
1 can crushed tomatoes (without basil added)
1 package taco seasoning
1 zucchini
1 package sliced white mushrooms
Half of a red onion, diced
Half a package of frozen sweet corn
Beans if you like, but I don’t so don’t add them 🙂

Cook the turkey in a pan on the stove, adding the taco seasoning (no water) to it after it is cooked. Have everything else already in the crockpot on low, add the turkey, cover and cook for 4-6 hours on low. Top with shredded cheddar cheese and enjoy!
*If freezing this, still cook the turkey first, then add with all of the other ingredients to a gallon freezer bag with the taco seasoning and when ready to put in crockpot, add the tomatoes then.

I also recommend having a bunch of granola bars, individual bags of goldfish crackers, frozen pizzas (Ellio’s is good because they are smaller so you don’t have to make a whole one) nuts, and lots of cereal- all good for in a pinch midnight/3am snacking!

It’s a lot, but you’ll thank me later!! 🙂
